Floral, direct and long, driven by red fruit, spices,
precise tannins and a marked mineral background.

WINEMAKING
Harvested on 24 September.
Pre-fermentative maceration for 72 hours and subsequent fermentation in vats with 100% whole
bunches. Post-fermentation maceration for 35 days.
First part of the ageing in 7Hl concrete and later in 15Hl eggs.
Natural cold stabilisation. Not clarified or filtered.

2021 began with the heaviest snowfall in recent years, leaving the vines covered in snow for many days. The
spring welcomed us with a frost that, although not catastrophic, marked what was to follow.
A cool summer, with few days of extreme heat and a late, wet and cold harvest.
The rains came in September and forced us to remove leaves and fight against botrytis. We finally finished
the harvest on the 15th of October, although we left a large part of the crop in the field.
2021 is austerity, cold, elegance and finesse. It is undoubtedly the great vintage of Gredos in recent times.
